Marco Oglesby has left Texas Ranch BBQ (formerly 12 Bones BBQ), the trailer owned by Sergio Varela. The cooking from the pit master, who previously worked at Opie’s in Spicewood and Schmidt Family Barbecue in Bee Caves, landed the trailer a spot on my March list of the Top 10 barbecue restaurants and trailers in Austin. Oglesby made the announcement on his Instagram page, and added the news that he was taking a role with the team at The Switch, the forthcoming Belterra restaurant from Shane Stiles and Co. of Stiles Switch.

The Switch, which will serve Cajun specialties and cocktails in addition to smoked meats, has amassed a team that includes collaborator Todd Duplechan of Lenoir, along with Stiles Switch veterans Bill Dumas, Lance Kirkpatrick and Christopher McGhee (formerly of Freedmen’s).

There was no immediate word on who is currently running the pits at Texas Ranch BBQ, which is located in front of Varela’s Papalote Taco House at 3632 South Congress Ave.
