Acclaimed Japanese chef bowls over Austin with new ramen shop

Move over, tonkotsu. Austin will soon be enjoying a new style of ramen when Sazan Ramen opens in The Crescent in early February. The concept comes from Taiki Wakayama of New York-based W & E Hospitality, the force behind several acclaimed East Coast concepts including Donburiya, Naruto Ramen, and Terakawa Ramen.
