The undying Jersey love affair with Taylor ham is about to take a giant, funky step.
Windy Brow Farms in Fredon (Sussex County) has introduced what it’s calling the state’s first Taylor ham ice cream, the introductory flavor in the farm’s Only in Jersey ice cream collection.
Taylor ham-only ice cream would be “gross,” says a smiling Jake Hunt, managing partner of Windy Brow Farms, so he added a French toast/maple element, creating a “really good balance of super sweet and super salty.”
Two pounds of Taylor ham (yes, actual Taylor ham, not some other brand of pork roll) can be found in each 2 1/2 gallon container of ice cream.
How do you make Taylor ham/French toast ice cream? (You never know, you might want to try this at home with that brand new ice cream maker.) You chop up and caramelize Taylor ham, pop it in the oven, then pan-fry it, then toss with cinnamon and sugar. Make a maple ice cream with local maple syrup, and mix in pieces of Windy Brow’s homemade challah bread. Voila, Taylor ham/French toast ice cream.
Joe Leonard of Newton, who stopped at Windy Brow the other day for a container, calls it “awesome.” His daughter, Evangeline (see video) couldn’t get enough of it.
Five flavors will be part of the farm’s Only in Jersey collection — one for each of the five years the Cow’s Brow Creamery, part of Windy Brow, has been in business. Linda and Jim Hunt, Jake’s parents, have owned the farm for 18 years; it dates to the late 1800s.
Jake is no stranger to ice cream making: while a student at the University of Delaware, he helped create a creamery on campus.
Current ice cream flavors at Windy Brow (now open Fridays-Sundays, expanding to seven days a week after Mother’s Day) include Madagascar bourbon vanilla, salty caramel, milk chocolate and white mint chip. Current vegan flavors include lavender agave, plus coconut blackberry sorbet and grapefruit rosemary sorbet.
The Taylor ham ice cream will be available at least until the end of July, according to Hunt. Other flavors in the Only in Jersey collection will be introduced every 3-4 weeks. They will include blueberry, sweet corn and tomato pie.
Yes, you read that right.
